We paid a visit to The Big Blue in Telford to meet with owner Stevie and his brother Mikey. The Durha family took over 10 years ago. They have a fantastic set up which incorporates Fish & Chips, Kebabs, and they make their own Pizzas. The Big Blue are part of the Just Eat network, and also have their own delivery drivers.
Stevie replaced his old Florigo range last year with a new 5-pan Island Range which was installed in April 2021 and Carol-Ann went to see how they were getting on.
What is the best and the most important difference in your new Florigo range?
Temperature wise the range manages more, always stays the same. You can tell the difference in the actual pans from my last Florigo to this new one, they even look different. The range handles heat really well, the temperature never drops. All of this makes a huge difference when you are busy.
Do you keep on top of queue’s better?
Yes, we are cooking food faster, temperature stays the same, staying right there.
Do you always fry this relaxed?
Yes, I’m relaxed anyway. As soon as we get busy, I know that I can turn a switch and I can get food out a lot quicker and I’m not going to keep the customer waiting.
What would you say is the recipe for success?
Be consistent, sticking to your product that you believe in. You have got to believe in your product, price increases are scary, but you have got to believe in your product. Since covid and now with the cost-of-living crisis, you can shop around but stick to your same quality product. Don’t serve a meal you wouldn’t eat yourself.
What is your favourite part of the job?
When we are busy! When everything is running smoothly! In the morning when you are prepping everything and then you see your food sold to people who love our product, it weirdly satisfying. A lot of hard work goes into it but at the end of the day the customer enjoys the nice food.
